Omelet Seasoning Mixes

Western Omelet Seasoning Mix
(Add to eggs; can also be used for scrambled eggs or fritatas; seasoning for about 25 three-egg omelets;omelet approximate cost per package, including bag: $1.42)

Mix Contents:
1/2 c. dried red & green bell peppers (64 cents)
1/2 c. dried diced tomatoes (64 cents)
1/2 c. dried minced onion (1 cent)
1 & 1/2 T. dried parsley flakes (9 cents)
(plus one baggie, 4 cents)

Instructions to include with mix:
1. Combine 1 T. seasoning mix with 3 T. water; microwave 2 minutes (or, pour 3 T. boiling water over 1 T. mix and let sit 5 minutes).
2. Add 3 eggs; beat with a fork.
3. Heat a small nonstick skillet on medium; pour in the egg mixture; let cook until somewhat firm, gently pulling up edges to allow liquid to flow to bottom; fold omelet and sprinkle with salt and pepper; flip once and cook until desired texture.
