Soup Mixes

Barley Soup Mix
(Makes about 15 cups of soup; approximate cost per package, including bag: $1.65)

Layer in quart jar or bag:
1 c. barley (48 cents)
1 c. split peas (24 cents)
1 c. long-grain rice (12 cents)
3/4 c. dried lentils (36 cents)
2 T. parsley flakes (18 cents)
2 tsp. garlic powder (10 cents)
1 tsp. pepper (5 cents)
2 tsp. salt (2 cents)
1 tsp. dried basil (3 cents)
1 tsp. dried oregano (3 cents)
(Plus one baggie, 4 cents)

Instructions to include with mix:
Place the soup mix into a large pot. Add 20 cups of water. Add optional 1 chopped medium onion. Bring to a boil, cover, lower heat, and simmer for 1 hour. Stir occasionally. Check after 30 minutes and add water as necessary.

Twisti Noodle Soup Mix
(Makes about 10 cups of soup; approximate cost per package, including bag: $2.30)

Layer in quart jar or bag:
2 T. parsley flakes (36 cents)
1 tsp. pepper (10 cents)
2T. beef bouillon or 4 cubes, unwrapped (12 cents)
1/3 c. minced onion (72 cents)
3 c. tri-color rotini (96 cents)
(Plus one baggie, 4 cents)

Instructions to include with mix:
Bring 8 cups of water to a boil. Add the soup mix and optional 14-oz. can of crushed or diced tomatoes. Bring to a boil again. Reduce heat and simmer uncovered for 12-15 minutes until the pasta is tender.

Holiday (red, white & green) Soup Mix
(Makes about 10 cups of soup; approximate cost per package, including bag: $1.84)

Layer in quart jar or bag:
3/4 c. dried red beans (kidney 36 cents)
3/4 c. dried white beans (navy 30 cents)
3/4 c. dried split peas (24 cents)
(Plus one baggie, 4 cents)

Layer in separate container to go into larger one:
2 T. dried, minced onion (27 cents)
2 T. beef bouillion or 4 cubes, unwrapped (12 cents)
2 T. dried, minced parsley (18 cents)
2 tsp. dried basil (6 cents)
1-1/2 tsp. chili powder (10 cents)
1 tsp. pepper (14 cents)
1 tsp. dried oregano (3 cents)

Instructions to include with mix:
Remove seasoning packet. Rinse beans, cover with water 1-2 inches over top of beans, cover with plastic wrap, and  microwave on high 15 minutes, rotating half-way through cooking time. Drain and rinse beans very well. Put cooked beans in large soup pot. Add 8 cups water, cover, and bring to a boil. Reduce heat, cover, and simmer 1 hour or until beans are tender. Stir occasionally. Add seasoning packet and 1 (28 oz) can crushed tomatoes (optional) and simmer for another 30 minutes.
